Favorite Christmas Cookie

I know, I know… Betty usually covers “all things recipe” – but hey, I’m a food connoisseur, so technically this falls in my area of expertise, too.

 

I’m searching for the perfect Christmas Cookie Recipe. That’s what I’m giving everyone for Christmas this year, a BIG platter of Christmas Cookies.

 

Now I already know a few good Christmas Cookie recipes – we made several batches last week in my Gourmet Cooking class. Here are a couple of my favorites:

 

Almond Cream Spritz

Makes about 60

1 cup butter, softened
1 (3-ounce) package cream cheese, softened
1/2 cup sugar
1/2 teaspoon almond extract
1/4 teaspoon vanilla extract
2 cups all-purpose flour
finely chopped almonds

Preheat oven to 375 F. Beat butter and cream cheese in a large mixing bowl with an electric mixer on medium speed for 30 seconds. Add sugar, almond extract, and vanilla; beat till combined. Stir in flour. Cover and chill dough for 30 minutes or until easily worked but not too stiff. Pack dough into a cookie press. Force dough through press onto ungreased cookie sheets. Sprinkle with almonds. Bake 8 to 10 minutes or until edges of cookies are firm but not brown. Allow to cool on baking sheet one minute then remove to wire racks to cool completely.


Whipped Shortbread

1 pound butter
1 cup powdered sugar
1 teaspoon vanilla
pinch salt
1/2 cup cornstarch
3 cups all-purpose flour

Preheat oven to 350 F. Cream together butter, icing sugar, vanilla and salt. Gradually add cornstarch and flour. Whip with an electric mixer until fluffy. Place into a cookie press and press out cookies on cool baking sheet. Decorate with candied cherries if desired. Bake 12-15 minutes. Let cool for 2 minutes on baking sheet, then remove to wire rack to cool completely. Store in an airtight container at room temperature.

I know some of you are great – borderline brilliant – cooks, so I thought you might like to help me. I’m looking for that perfect cookie recipe - one that screams “Merry Christmas” – so if you have it, send it to me. I’ll make them for all my friends – and my Gourmet Cooking class, too.

Hi Jug
I have 2 recipies for you...
Snowballs
-1 large can of condensed milk
-1/2 cup of margarine
-3/4 cup of drinking chocolate/cocoa
-Approx 16 crushed dugestive cookies
-Coconut shavings
-Melt margarine an milk on pan
-Mix everthing together except coconut
-Shape dough into balls
-Role through coconut shavings

Chocolate Chewy Cookies
-1 1/4 cups of butter
-2 Cups of sugar
-2 Eggs
-2 tsp vanilla
-2 Cups flour
-1 Cup cocoa
-1 tsp baking soda
-1/2 tsp salt

Cream together margarine and sugar; add eggs and vanilla. Blend well. Combine flour,cocoa,baking soda and salt,then blend into creamed mixture.

Stir in nuts or chocolate chips if desired.

Drop by teaspoon on an ungreased cookie sheet. Bake in oven at 300oF for 8 to 9 miutes. Do not overbake.Cool on cookie sheet so tops wrinkle

SUGER cookies decorated as ornaments and sutch. i'm pretty sure you have the recipe. make icing, (a lot!) have soem white, and some other colors, some cookie cutters, and your ingreadeents, and you all set!

THat sounds so yummy! THats a great gift Jug! Especially since your so good at cooking! You should try peppermint pinwheels! Their so christmasy, i'll try to post the recipe later!

Chocolate cookie
Ingredients
• 3/4 cup sugar
• 3/4 cup packed brown sugar
• 1 cup butter
• 1 large egg
• 2 1/4 cups all-purpose flour
• 1 teaspoon baking soda
• 1/2 teaspoon salt
• 2 cups semisweet chocolate chips
• if desired, 1 cup chopped pecans
Directions
Preheat oven to 375 degrees. Mix sugar, brown sugar, butter and egg in a large bowl by hand. Stir in flour, baking soda, and salt. The dough will be very stiff. Stir in chocolate chips. Drop dough by rounded tablespoonfuls 2 inches apart onto ungreased cookie sheet. Bake 8 to 10 minutes or until light brown. The centers will be soft. Let cool for one minute then remove from cookie sheet and place on wire rack to finish cooling

HI every one! I haven't been around in a while! Sorry! Never have time! Christmas baking! School has a project for different plants. My plant is pepper! SPICE pepper! I have a great recipe for cookies! You can decide with or witout the secret ingredient! Have fun! Missed you all!

Black Pepper Butter Cookies

2 1/4 cups all-purpose flour
1 cup granulated sugar
1 cup sweet unsalted butter, softened
1 large egg
1 teaspoon baking soda
1 teaspoon pure vanilla extract
1 1/2 teaspoons black pepper
extra sugar, for dipping glass

Mix all ingredients (except for the extra sugar for dipping the glass) together well using a heavy duty mixer.
Roll into 1/2 inch size balls-you will need three large ungreased cookie sheets, 16 balls per sheet.
Use the flat base of a drinking glass that has been dipped into sugar to flatten each dough ball on the cookie sheets.
Bake in a preheated 350 F (or 180 C) oven for 8-11 minutes or until lighly browned on the edges- do not overbake.
Remove to wire racks to cool.

EAT! ENJOY! A famous Town Girl recipe! My grade has a luncheon on wednesday! This will be the recipe i'm using! LOVE Butter Cookies! I think i'll start posting more recipes once I get more organized! UH!Tests, tests, MORE tests! But I don't really mind! Every body uses a recipe based on that plant, unless it's not edible of course!

Boy everyone is posting lotts of recipes.I don't know if I could try all of them.Maybe I could try some recipes for Santa.I could try Betty's "Peppermint Bark".I could also try your "Whipped Shortbread",Jug.I think these will be family favorites and Santa's favorites.I am going to take cooking classes in middle school.
